Merry Christmas from all of us here at the Manse.
I’ll be posting sporadically over the next week hoping to finish up the book and so bring a close to a New Year’s Resolution. Nothing like a deadline.
I thought I’d leave you with the menus for the Easy and Elegant Life Christmas Feasts.
Christmas Eve is Black Tie with Mrs. E. and my mother. The children will be nestled all snug in their beds whilst we tuck into:
Roasted red pepper soup with jumbo lump crabmeat
A salad of beets, goat cheese, mâché, walnuts and a walnut vinaigrette
Seafood crêpes filled will scallops, shrimp, haddock in a white sauce
Bûche de Noël
Christmas Day Brunch after the madness of the present exchange will be soft scrambled eggs in lobster butter with lobster meat, bacon, tomato and scallions in a puff pastry shell topped with créme fraîche and a dollop of paddlefish caviar and chive sprig.
Christmas Supper after a long day will be a reward of
Individual Beef Wellingtons
Simple Salad vinaigrette
And lashings of bubbles.

How did your individual Wellington’s turn out? We tried the same for Christmas dinner, and then ended up slightly over cooked for my taste. Thankfully, the perigueux sauce I made was phenomenal, and really saved the slightly dry beef.
I am trying to find the French expression for “and to all a good night!” Would you have it please?

Hello Sharon, “et à tous une bonne nuit” is the literal translation, as I’m sure you know. But I don’t think that the French use that expression in the same manner, the poet was English, after all.
George, last minute changes to the menu meant that they didn’t get made! Will do them for a dinner party and post the results early this new year.
